If you're interested in making a deeper connection with the people, places and traditions of Maui, Molokai and Lanai, consider the "voluntourism" opportunities presented in this issue. We'll also introduce the latest and greatest of Maui's many culinary experiences. So read on, and we'll see you on Maui!

A great way to share your aloha with the place you love to visit is by doing volunteer work while on vacation. "Voluntourism" opportunities connect you with people who think like you do, allow you to visit remote and pristine areas, and build rapport with local residents as well as create meaningful vacation memories.
You can give back to the island while learning about its natural history, native culture, plants and wildlife. All you have to do is be willing to roll up your sleeves and pitch in to work for a few hours or help for a few days during your stay.
Aloha for Animals
Aloha for Animals
Maui Humane Society offers its Beach Buddies program for visitors every Wednesday and Friday between 10 am and 4 pm. Take care of a deserving dog for a day and enjoy Maui's beautiful beaches together. Each outing starts with a safety talk at the animal shelter, where you're given a backpack filled with dog treats, collars, spare towels and waste bags. Your dog will be bathed and happy to join you for some fun in the sun. Sign up at mauihumanesociety.org to help and have a rewarding day.
Leilani Farm Sanctuary in Haiku is a tropical farm setting for rescued animals and birds of all varieties, from donkeys to ducks and tortoises to turkeys. Volunteer projects take place on Mondays and Wednesdays, beginning at 9 am. Pick a skill that you have experience for, like animal grooming, gardening, cleaning the barn or deck, weed whacking, spreading wood chips and mulch, removing invasive plants, and maintaining trails. The island of Lana'i is home to a three-acre sanctuary for more than 500 cats of all ages and sizes. Lana'i Cat Sanctuary rescues wild and abandoned cats to save them from suffering, reduce over-population and help protect endangered birds. Volunteers are welcome every day to help out between 10 am and 3 pm. You can pet and feed the cats, clean out their housing, water the grounds, cut grass, mulch and fertilize, or pull weeds. Fishponds and Forests
Lā Hana Lāna'i is a community stewardship program for volunteers to care for the environment and learn about the island's sacred places. Offered one day each month, stewardship events allow you to explore the culture and heritage of Lāna'i while working on the land or at the seashore. Learn how to rebuild a traditional Hawaiian fishpond at the Waia'ōpae Fishpond restoration project. Spend a day in the uplands to help protect a native Koa forest by removing invasive plants and replanting seedlings of Acacia koa trees. Go to lahanalanai.com for the event dates.
Fishponds and Forests
The traditional skills of building a Hawaiian loko 'ia (fishpond) and restoring its functionality were reborn on Molokai in the 1980s. To date, several fishponds along the island's south-facing shores have been rebuilt. These days, the nonprofit Hui o Kuapā is working on the largest loko 'ia, Keawanui, a 55-acre marvel of indigenous engineering. This restoration work is part of a vision for food self-sufficiency and natural resource management using cultural traditions. A variety of programs are available; see huiokuapa.org for the choices.
Get ready to get your hands dirty and learn about the native flora and forest trees with the Maui Cultural Lands 'ohana (family). For 15 years, this grass-roots land trust organization has been protecting native forests, stabilizing cultural sites and replanting coastal and inland areas with endemic species. Every Saturday in Honokōwai Valley, where it all began, you can help remove invasive plants, replant native trees, restore lo'i (patches) for kalo cultivation and rebuild rock walls. Lo'i kalo restoration work is also being done in Ukumehame Valley, and native plant and tree reforestation is happening on the Kaheawa Wind Farm. Visit mauiculturallands.org for the specifics.

Ocean Advocacy
Pacific Whale Foundation (PWF) provides opportunities to learn about the marine environment and train to become a marine naturalist. You can also take advantage of community service projects that help protect the island's fragile shorelines, coral reef and open land. Check out PWF's Volunteering on Vacation program and help make a difference by joining beach cleanups or maintaining oceanside trails in South Maui. Go to volunteersonvacation.org for details.
In West Maui, you can help monitor shoreline water quality and protect the watershed on land through West Maui Kumuwai, a movement to reduce pollutants that harm the ocean. See westmauikumuwai.org for more opportunities.

New restaurants are exciting to try because they usually open the door to new trends in cuisine and libations. In West Maui, these two offerings will take your taste buds to Italy while expanding your horizon across America to Scotland and Ireland in the world of distilled spirits.
The Dirty Monkey
The Dirty Monkey
Introduced to Maui by The Goat Group pub owners of Southern California, The Dirty Monkey has filled the Front Street second floor location formerly occupied by Moose McGillycuddy's. Completely refurbished and refitted with a sleek minimalist yet inviting decor, this restaurant-bar has quickly become the Lahaina after-dark place to be. Its granite-topped and wood bar wraps around two sides of the open-air dining room that features seating in leather booths and at high tables along the lanai. The menu is labeled as "Bites" that are meant to be shared, and the locally sourced pub fare is outstanding.
The signature Monkey Pub Chips make for a great start. Thickly sliced potatoes are curved like a monkey's ear but are lightly fried, well seasoned and delicious. There are two burger choices: Taro Burger served with caramelized Bourbon onions, tomato, arugula, avocado and cheese. The Slap Burger is a mouthful, made with local-raised grass-fed beef, served with bacon, caramelized Bourbon onions, tomato, butter lettuce and your choice of cheese. Fish lovers will really enjoy the Fish Tacos on a soft corn tortilla loaded with blackened Mahimahi, pineapple-mango pico de gallo and tomatillo salsa. The salads are a meal in themselves. Shrimp & Avocado features spicy shrimp and sliced avocado over a bed of mixed greens topped with corn kernels shaved from the cob, pistachio nuts, cherry tomatoes and radishes in creamy jalapeno-lime dressing. Quinoa & Kale boasts red quinoa with green kale, carrots, almonds, shredded apples and cabbage in agave-lemon dressing. The adventurous will want to try Shrimp N' Grits, a plate of smoked Gouda cheese grits topped with bacon, garlic, shallots, lemon and shrimp. Corn Lollipops are Mexico City style: grilled corncobs smothered in chili spice and sea salt, then served on a stick to roll in creamy lime aioli.
You'll need the food when you get started on the beverage menu. Choose from over 120 Bourbons, Whiskeys and Ryes from America, Canada, Japan, Taiwan and Ireland, and nearly 40 single malt Scotches from all the islands of Scotland. There's a global selection of 16 craft beers on tap and a fun mix of cocktails, too. Flat screen TVs and a surround-sound system play by day, and live musicians or DJs entertain by night. A Fianco
Next door (a fianco) to the very popular Sale Pepe ristorante in Old Lahaina Center is a new wine bar and small plates bistro, A Fianco. It was developed by Sale Pepe owners Michele and Qiana Di Bari to provide a casual lunch spot in the heart of Lahaina for workers and shoppers. Authentic Italian cuisine is in the spotlight on a menu that changes frequently according to seasonal and local availability. Chef Michele makes his own pastas, breads and artisanal pizza pies. These artful grains are combined with imported meats and cheeses, and island-farmed tomatoes and salad greens.
A Fianco
The lunch menu is divided into four courses with two dishes to select from in each. For example, Salads include fresh Arucola e Parmigiano, or Pomodori di Kealoha (tomatoes from Kealoha Farms and mozzarella). The Pasta course features Spaghetti al Sugo made with Maui Cattle Co. beef, or Fusilli al Pesto. Panini sandwiches are delizioso: Salame Rosa is layered with Asiago and Arciuga cheeses and Romaine lettuce. A veggie panini features Pomodori di Kealoha, Fior di Latte Mozzarella and arucola greens. Pizzas are about 8 inches, sized for one person: try Sausage with Fior di Latte and Gorgonzola cheeses, or Tomato and Basil with Mozzarella. Dolci (desserts) are also available, including Tiramisu, Pannacotta del Giorno and Rotolino with Nutella and sugar.

You are correct the Maui Marathon and Half Marathon has been moved from September to October this year. The Maui Marathon date for 2017 is October 15. Please note the Slappy Cakes 10k and Maui Tacos 5k will also take place on October 15th for more details go to mauimarathon.com. The Run Forest Run Front Street mile, however will be held September 15th along with a 10k/5k for information go to: www.active.com for the September running events.

"Mac Nut Crusted Mahi-mahi" from Seascape Restaurant
Take your palate on an island tour at Seascape Restaurant, located at Maui Ocean Center overlooking the calm waters of Maalaea Bay. Sourcing fresh, locally grown ingredients from the Hawaii Island to Kauai, Seascape serves a timeless dish that brings together two iconic Hawaiian ingredients: macadamia nuts and fresh mahi-mahi. Crafted by Chef Henry Tariga, the mac nut crusted mahi-mahi is a simple dish that packs a melting pot of flavors from mauka to makai (mountain to the sea).
Hawaii is renowned for fresh-caught fish, and mahi-mahi has long been a favorite among locals and visitors. Mahi is translated from Hawaiian language as "strong", so the mahi-mahi is aptly named for its fighting ability and strength. A stunning fish with electric blue, silver, and yellow coloration, its light pink flesh has a firm texture with a mild, sweet flavor. U.S. wild-caught mahi-mahi is sustainably managed and harvested under U.S. regulations.

Macadamia nuts are one of Hawaii's signature crops. A healthy choice for many, macadamia nuts can be eaten in a number of ways – raw, chopped, roasted, or covered in chocolate. They are an excellent choice for coating mahi-mahi and other fish.
Seascape Restaurant serves daily fresh-catch specials, locally-inspired cuisine, vegetarian options, and more. Certified as a Platinum Ocean Friendly Restaurant, Seascape prides itself on serving a sustainable menu while following industry best practices to minimize its impact on the environment.
Chef's Corner - Mac Nut Mahimahi

Mac Nut Crusted Mahi-mahi with Lemongrass Cream Sauce
Fish Ingredients:
• 4-6 oz. of fresh mahi-mahi (substitutable with other fish)
• ½ cups macadamia nut (substitutable with almonds or peanuts)
• 2 cups panko crumbs
• 1 tablespoon of chopped parsley
• 1 teaspoon of chopped thyme
• Salt and pepper
• Olive oil
Lemongrass Cream Sauce:
• ¼ cup white wine
• 1 cup heavy cream
• 1 stick unsalted butter, softened
• 2 stalks lemongrass, thinly sliced
• 1 sprig of thyme
• 2 shallots
• 6 peppercorns
• 2 bay leaves
• Salt and pepper
• 1 tablespoon olive oil
Instructions:
Blend macadamia nut and panko in a food processer.
Coat fish with olive oil, parsley, thyme, salt, and pepper and dip in mac nut/panko blend.
Add olive oil to sauté pan and bring to medium heat.
Place fish in pan and cook for approximately 7 minutes per side until golden brown.
Put aside to rest.
In a saucepot, combine thyme, lemongrass, shallots, peppercorn, bay leaves, and 1 tbsp. of olive oil. Sauté on medium heat until shallots are translucent.
Add 1 cup of white wine and reduce in half.
Add 1 cup of heavy cream and reduce in half.
Turn off heat and add soft butter, salt, and pepper to taste and set aside to cool.
Strain before serving.
Plate the dish with mahi-mahi and drizzle with lemongrass cream sauce. Pair with your choice of garnishes and starch. We recommend a pineapple or fruit salsa topping and steamed or boiled purple sweet potato. Enjoy!

We know that she enjoyed two wonderful vacations with her husband and two sons. The family enjoyed island treats such as shave ice and fresh coconut milk. They visited the fascinating Maui Ocean Center with its amazing see thru tunnel of aquatic life. They even found time to hike in lovely, lush Hana and enjoy sunset at stunning, sandy Kaanapali beach!
